New Orleans never travels lightly, and tonight it arrives in full. Prepare to be inundated with the great flavors of the City that Care Forgot presented by three of the great chefs in the city Steven Stryjewski, Ryan Prewitt, and Tyler Spreen. Many will know that the basis of all of this great food comes from harnessing and uplifting the simplest, yet finest, ingredients available. Truly from the farm and the range and the sea to the table. When combined with the boldness of crawfish and the nuance of freshly foraged chanterelles, grits can go to the top of the mountain and scream ‘Hallelujah.’

This same philosphy holds for the Matthiassons (Steve came to the wine world after running farmers markets in northern California for years and Jill ran CSAs after getting her masters in agriculture) who create beauty and subtlety from fruit that is farmed with gentility and grace, to create balance between ripeness, acidity, and tenacity.  These wines, with the power and grace of a prima ballerina, will wrap themselves around these dishes and together leap into the starry night.
